Pan Cooked Pork Chops

Pork Chops
egg
bread crumbs
can 16 oz. of diced tomatoe
ranch dressing
pinch of red pepper
veg oil

In frying pan coat the bottom with oil
beat egg in bowl, dip pork chop in egg and then bread crumbs,
heat the oil in frying pan on low, place pork chops in pan and brown on both sides
In a bowl mix diced tomatoes, 2 teaspoons of ranch dressing, and a pinch of red pepper
Pour over chops in frying pan, lower heat and simmer for 30 minutes
Serve with white rice or favorite side dish.

Mashed Potatoes

5 lbs potatoes
butter
milk
electric mixer
salt

peel potatoes and 1/4 them place them in a pot of water
swirl the potatoes with your hand to wash them now drain the water off
cover the potatoes with water
add salt to the water
cover and on high heat let them come to a boil
crack the cover and let them boil for about 15 mins. then test with a fork if they are still tough cook for additional 5 minutes
When potatoes are soft drain the water off and in the same pot add 1 tblsp of butter and 1/4 cup of milk begin mixing
As you mix you will add more milk till the potatoes look like snow.
Becareful not to add to much milk they will become soupy so just add a little at a time

These are delicious and very easy to make

Pot Roast

3 lbs rump roast
1 onion
1 can beef gravy
veg. oil
2 cups wateer

In cast iron pot cover the bottom with oil heat over low setting till oil is hot
Place roast in pot and brown on all sides
Cut up onion and add to pan let the onion soften (don't brown)
Add 2 cups of water cover and let it come to a boil
lower the flame and cook for 3 hours (don't fully cover leave the cover a little cracked)
Keep checking and if the water gets low add a little more
In 1 1/2 hours turn the roast to the other side
15 minutes before the roast is done add the jar of gravy

CHICKEN CORDON BLEU

3 Chicken Cutlet Breasts cut in half
3 slices swiss
3 slices ham
2 tbsp butter
1 can cream chicken soup
1/4 cup milk
parsley

flatten chicken breasts
top each with 1/2 slice of ham and 1/2 slice of cheese
roll up tightly and secure with toothpicks
brown butter in skillet
add chicken brown on all sides
in a bowl combine soup and milk stir well
slowly pour mixture over chicken in skillet
Cover, and simmer for 20 to 25 minutes
stir occassionally
Garnish with parsley

Serve and enjoy

HAM AND BROCCOLI CASSEROLE

Ham
5 lbs potatoes
1 can of cream of broccoli soup
1/2 cup mayo
broccoli
pkg 16oz of cheedar cheese

Cook broccoli and let drain well, boil potatoes till soft, In a baking dish line the bottpm with broccoli, then cube the ham ( you can use a ham steak, or this is a great soloution for left over ham) sprinkle ham over the broccoli, place boiled potatoes over the ham and broccoli.

In a bowl combine 1/2 a cup of mayo and the can of cream of broccoli soup

Spread this mixture over the potatoes evenly
Now sprinkle with cheedar
Cover with foil

Oven to 350 bake covered for 40 minutes them take cover off and bake for additional 5 mins.

Serve and enjoy

Yummy Pork Chops

4 Center Cut Pork Chops Medium Cut
1 Jar of applesauce
ketchup
1 medium onion
salt and pepper

in a bowl combine 1/2 the jar of applesauce
a large tablespoon of ketchup
and the onion chopped
add salt and pepper to taste
Stir till all is combined

Place Pork Chops in baking dish
Cover them with the mixture
Bake at 350
45 to 50 minutes

Enjoy these are delicious

GRANDA"S IRISH SODA BREAD

With St. Patricks Day upon us I would like to share Grandma's delicious reciepe




4 c flour 3/4 c sugar
2 ½ tsp bake powder 1 ½ tsp bake soda
1 tsp salt 1 c raisins

then add:

1 ½ cups buttermilk
1 unbeaten eggs
2 tbsp melt butter
mix all together: 350 pre heated oven. Place in greased cake pan. Bake 1 hr. turn oven off, leave in 10 more minutes."
