Potato Salad

5 lbs potatoes
mayo
sugar
vinegar
onion
dry mustard
paprika
salt and pepper
parsley

boil potatoes (slow boil) for 10minutes
in a bowl combine a cup of mayo, 1 tbsp. of sugar, 2 tbsp. of vinegar, and a tsp. of dry mustard.
dice the potatoes, dice onion
add the mixture of mayo, etc. to potatoes
toss the potatoes gently
garnish with parsley and paprika
chill in fridge for a few hours
serve cold

Home made Ice Tea

In a large sauce pan fill with water
Let water come to a boil
Add 5 tea bags and leave them in for 15 minutes

Then pour into a pitcher
add 3/4 cup of sugar
and 1/2 cup of lemon juice
add ice cubes
chill in fridge

Great drink for the summer

You can substitute a low calorie sugar if you would like

Baked potato on the bar b que

With the warm weather who wants to bake in the oven
Try baking potatoes on the grill

Turn grill on high
Wash potatoes throughly
Pat them dry witha paper towel
Poke holes in them with a fork on both sides
wrap them in tin foil (heavy duty)
Place potatoes on grill and close the cover
turn with thongs every fifteen minutes
Cook for 45 minutes or until potatoes are soft when poked with a fork

Serve with butter or sour cream

Baked Macaroni and Cheese

3 eggs
1 1/2 cups milk
salt and pepper
1 lb. elbow macaroni
1 lb. extra sharp cheddar cheese

Cook macaroni
Grease casarole dish
Preheat oven 325
Layer mac and cheese
Mix eggs milk salt and pepper and pour over top
Immediately put in oven
Bake for approximatelt 45 minutes or until brown on top

Chicken Broccoli Bake

9 thin sliced chicken cutlet
1 head of broccoli
cram of broccoli soup
Italian style bread crumbs
½ cup of may
16 oz shredded cheeder cheese

Steam the broccoli till tender
Line the bottom of a casserole dish with broccoli spears
Place the chicken cutlets uncooked on top of the broccoli
Sprinkle the italian bread crumbs over the chicken make sure they are covered completely
in a bowl combine the soup and mayo
Spread this mixture evenly over the bread crumbs
Sprinkle cheeder cheese on top

Preheat oven to 350
bake the casserole for one hour uncovered

Serve with rice.

Fried cauliflower

1 head cauliflower
eggs
italian bread crumbs
oil

Stem cauliflower till tender
let it drain and cool down
in a large skillet cover the bottom with oil
let oil get hot dip cauliflower piece by piece in egg and then italian bread crumbs
place in skillet and let brown on all sides

This is delicious enjoy

Mashed Turnip

Turnip is the hardest thing I have ever cooked but after many tries I finally mastered it. Here is the recipe.

One turnip
butter
milk
electric mixer
sugar

Quarter turnip, then peel the skin off the turnip, place in a large pot of salted water, cook over high heat covered till the water begins to boil, then lower the heat and crack the pot cover to let some of the steam release.
Keep testing with a fork till turnip is soft. This can take awhile turnip can be tough. When the fork goes through the turnip easily take off the stove and drain water off. In same pot add 2 tblsp. of butter and a drop of milk use a fork or whisk to break up the turnip when turnip is in pieces use the electric mixer to make the turnip smooth. At this point you may have to add just a drop more of milk.
When you are done mixing add a tsp. of sugar whisk it into the turnip this will take the bitter taste away (taste turnip you may have to add another 1/2 tsp of sugar)
